while veggies are cooking, unwrap tofu block and press it with paper towels to get some moisture out. (I wrap it in paper towels and put a plate or 2 on top prior to chopping)
move veggies to side of pan and add tofu block, start smashing it to resemble scrambled egg texture
add turmeric
add paprika
mix together
prior to making tofu scramble, dice potatoes, pepper, onion.
place on baking sheet.
using a brush, lightly brush on some olive oil to coat.
bake at 400 degrees for 20-30min.
add scramble to wrap, add hot sauce or low sodium ketchup if desired, and rollllll!
Total Cost per plate - under $2 (ours cost $1.80 for the plate pictured)….but I ate 2 wraps, and wanted a third! This amount of scramble will feed 6. We will do this 1x per week. (maybe 2 and have it just as a scramble, make a breakfast bowl or even a English muffin sandwich)
