Jamaican Jerk Jackfruit Platter

 7 oz Jackfruit (pulled apart)
 5 oz Black Beans
 0.25 cup Brown Rice
 0.50 cup Plantain pieces
 1 tsp brown sugar
 1 tsp Garlic Powder
 1 tsp Ground Nutmeg
 1 tsp Ground Cinnamon
 0.50 tbsp Ground allspice
 1 tsp ground Ginger
 1 tbsp Thyme
 1 tbsp Apple Cider Vinegar
 1 tbsp Soy Sauce

The ingredients and nutrient facts are for the picture of the plate, but we bulk cooked this one and threw most of it together. Night of we cooked the jerk jackfruit and plantains.

Cook rice in bulk at beginning of week.

Beans we just rinsed a BPA free organic can of black beans.

Jackfruit - drain from can, pull apart to resemble pulled pork texture. cut up and onion and sautee together. when onion begins to cook down, add the vinegar and soy sauce mixture. continue to cook. when texture of the jack fruit softens a bit, dump in the mixture of all the dried spices and mix together well.

Plantains - peel and cut. bake at 350 degrees for about 15-20min (or desired softness)

Salad - that was just a little handful of kale and tomatoes with vinegar on it that we had left over in the fridge.

Plate it and add your favorite hot sauce!!

Total cost for that plate was under $2 (ours came out to about $1.50). and I was stufffffed!
